Straw mushroom with coconut soup (Tom Kha Kai)
Some of you may know Tom Kha Kai (Chicken in coconut soup) Thai food this usually uses chicken but I will be making the recipe vegan, using straw mushrooms instead of chicken. This soup also has many herbs such as galangal, lemon grass, lime leaf and shallots. These herbs help nourish our health. I boil these herbs with coconut milk and straw mushroom making it very fragrant. This soup is not very spicy so kids and adults can eat this soup (Do not put chili if you do not want). You can share with friends or make for merit. I sincerely hope you will enjoy this healthy vegan meal.

Ingredients
1Galangal 2 Lemon grass 3Lime leaf 4 Straw mushroom 5 Shallots 6 Chili 7 Coconut milk
8 Roasted chili 9 Tomato 10 Coriander 11 Lime 12 Soy sauce 13 Salt 14 Sugar
How to cook staw mushrooms with coconut soup
1Smash chili, lemon grass, shallots and cut staw mushrooms, galangal, tomato, coriander, tear lime leaf and set aside.
2Bring galangal, lemon grass, shallots and staw mushrooms to a boil and then add coconut milk.
3Put in tomato, lime leaf and chili.
4Season with sugar, salt, soy sauce, lime and put coriander in to boil until fragrant and turn off stove.
5Put staw mushrooms with coconut soup in the bowl. Sprinkle with coriander and roasted chili. Serve with rice and enjoy your delicious and healthy vegan meal.
