Thai local food. I'm made cook with my friends at home. (With cooking recipe.)
Hello everyone. Today has something new. The story I've never write on this platform for present to everyone.
On yesterday night. Me and my friends share the money to buy chicken to cook the food "Thai local food". Hmmmm... I don't know the name of this food in English. I would like to call the name translated into English, then you may be puzzled. Hahaha.
In Thai we call this "Distill a chicken" or "Baked the chicken under the water". Have a look and read, maybe you'll know the name of this menu in English for replied to me.
Okay, let's get started. >>>>>>>>Warning!! This menu has a hot and very spicy taste.
The chicken we bring to cook. We use the chicken fed in naturally. We don't use a chicken fed comfortably on the farm. Which the chicken meat is very toughness. Hahaha. Yes!! We use the toughness chicken meat.
It has a degree of toughness that I can not use the kitchen knife for split it. I use the "Knife for cut the firewood" to split the toughness chicken meat. Hahaha.
This menu made we lose the chopping board. Hahaha.
Chop the chicken and wash it thoroughly. And put in to the pot.
I'm sorry somebody is a smoker....... Me too. :)
We use the spices is a hot and spicy herb.
- The hot basil (In thai we call Kaprao).
- Thai red hot chilli.
- Fresh the green pepper and black pepper.
- Fingerroot.
Garlic
Lemon grass
Kaffir lime leaf.
Next step we take all the spices to slice and pound to very pulpy. Except the hot basil. ........ The hot basilgarnish in the last step.
Bring the pulpy spices to mix with the chicken in the pot. Taste with 1 cup of the fish sauce, and a half cup of sugar. I usually use pumpkin instead of sugar. But yesterday I can't to find to buy a pumpkin. I have to use sugar.
In the next step. You should watch out. Because if you make a mistake. This menu will to burn. And you can not eat it.
I used a similar method to distill. I'll put the water on the pot and put it on the top of the pot with chicken. Between these two pots. Must be closed to prevent air in and out. We will bake the chicken this way. And we bake chicken with high heat temp.
When the water on the top pot is start to boiling. We will take out the hot water. And put the normal water back. We do this four times. The chicken baking is finish (Around 30-45 minutes).
Warning!!! In the process of baking or distill. You must be very careful. Do not let air in and out. Maybe you'll use a cloth or cotton pad to very closed. If your pot is not properly closed. This food may burn.
It's finished!! The chicken is soft for eat.
Put in a dish. And decorated with The hot basil for serving.
Most Thai people consume "rice" rather than bread or potatoes. Most Thai food has a hot tasty and spicy taste. So, this menu if you eat with rice, it is not very spicy.
And apologize to everyone, Because I didn't decorate this to look beautiful dish. Me and most of my friends are single man. Hahaha.

กว่าผมจะชำนาญผมก็ทำไหม้ไปหลายตัวเหมือนกันครับ ฮ่าๆๆๆๆๆ
ก็ต้องปิดฝาให้สนิทจริงๆ อ่ะครับ กับช่วงที่น้ำด้านบนเริ่มเดือด ต้องรีบเปลี่ยนออกครับ อิอิอิ
แต่พวกผมเอาวิธีนี้มาใช้ทำพะโล้ขาหมู กับซุปขาวัวหางวัวอ่ะครับ ^^ หลายน้ำหน่อย แต่เปื่อยดีครับ ^^

ใช่พี่ พอเห็นว่าเริ่มมีฟองมีไอขึ้น พวกผมก็ตักออกแล้วครับ อีกอย่างน้ำด้านบน พวกผมใส่เยอะหน่อย มันจะได้หนักปิดแน่นๆ ^^ ช่วงถ่ายน้ำ อาจจะมีอากาศออกบ้าง แต่ก็ไม่เป็นไรครับ เพราะแค่แป็บเดียว ^^
