With your various interests, you will definitely find plenty of topics on Steemit that interest you. As for posting, post material that you are interested in and that you are passionate about.
Also, it's best to have a few high-quality posts per week (or per day) than many poor-quality posts. If you spend some time and effort to make interesting and attractive posts, you will surely attract more readers and more followers.
