Thai style braised pork noodle in Chiang Mai

Since I arrived in Southeast Asia my Chinese friends introduced me to this new concept of comfort food. For them, anything that is soupy is almost equal to love! I confess that I’m not a super fan of soups, especially when outside we have around 40°… However, little by little, I end up understanding that a hot bowl of noodles can also be refreshing for your body and for your heart.

In Singapore, Malaysia, Laos, and Thailand, which are the countries I visited, you can find unique noodles in different parts of those countries. Here in Chiang Mai, north of Thailand, the Tom Yam is pretty famous, however, my favorite is the braised pork noodle! And the reason, I explain here in this post!

The braised pork noodle

I fell in love with this noodle since I was walking around a food court and suddenly I felt some aroma of cinnamon and barbecue. A lady opened a big pan, where a broth seemed to be cooked for hours and hours. She took a piece of pork from inside and chopped serving the that with rice noodle. You could feel the smell it at a distance and it looked very very tasty. I decided to try and I never forgot that experience.

The braised pork noodle is a dish with tons of flavors. Looking for the recipe after, I discover that my nose and tongue were right! It definitely has a lot of cinnamon and many other seasonings inside. Onion, garlic, anise, coriander, and galangal, which is a kind of ginger very typical in Thailand.

Because the pork is cooked for hours in that broth, it becomes soft and super tasty! Even if you’re not a soup person, I think you will love it!

The braised pork is served with a boiled egg and kale. On the top, they put some fried garlic, roasted chili in vinegar and some spring onion and coriander chopped. Yay! It’s really a super bowl!

Where to eat this amazing dish in Chiang Mai

More and more I discover Southeast Asia, more and more I fall in love with these simple local restaurants where a lady seems to be there cooking her family recipe for years. Sometimes she barely speaks English, but she’ll be very gentle and kind to serve you. This place, which doesn’t have a name in English, is exactly like that! And I love to go there because the food is simply delicious and I consider that she prepared one of the best-Braised pork noodles that I ever had!

The place is super simple and the kitchen is exactly like home! The lady is super kind and lovely, even without speaking any word in English! You can have water with ice for free too! The prices are amazingly affordable! For the bowl, I paid 45 baths with is less than US$ 2,00!!

If you want to try the braised pork noodle like a local, with a good taste and aroma, this is the place to go! I hope that you do it and just understand how noodles can be so comfy and so good like a hug!
