Sing Yi's San Lao Hor Fun
Yesterday, I shared my dinner which is a version of Hor Fun that utilize beef as the protein of the meal. For this post, I would like to show you a version of the Hor Fun dish that used fish as the highlight of this dish.
Take note, I had this meal at a different restaurant that is different from what I posted yesterday. Here in Singapore, Hor Fun is one of the local delights that is being served by majority of restaurants that specialized in Chinese cuisine. I have mentioned yesterday that there are several types of Hor Fun which range from beef hor fun, mixed seafood hor fun, and san lao (fish) hor fun.
If you noticed, this San Lao Hor Fun looks entirely different from the other versions of it, this one is almost white. The only color that you see is the spring onion. Regardless of the color, I can guarantee that it is more flavoursome than how it looks.
Theres is a subtle flavour of fish which I want to commend. It doesn’t not taste too fishy at all. If you are a fan of light tasting dish then this one's for you. It has also bean sprout which adds a little crunch to it, a great compliment to the dish. As I mentioned yesterday, for this kind of dish a good amount of chilli is a good way to enjoy eating this meal. The spice & acidity of the pickled green chilli really helps bring a different kind of experience for this meal.

Obviously, the food place is an open area with lots of ceiling fans to ventilate the area.
Overall, my dining experience is quite satisfactory and I just love this kind of food. It’s a sumptuous meal!
