Recipe for coconut chutney and dosa batter!

I recieved a lot of love on my last post, I was quite happy. So as promised here's the recipe for chutney and dosa batter.
COCONUT CHUTNEY
This chutney is quite famous in south indian stores and it's the most loved chutney to eat.
Take a grinder and directly add ingredients to it. Add 1 fresh grated coconut, this would be around 2 cups. To it, add around 2 tablespoon of roasted chana dal, it's okay if it is not available. Add a small piece of ginger to it and a small green chilly to have a nice taste. Add a small piece of tamarind, add salt according to taste and add enough water to make it to a nice paste. It's upto you, you want your chutney to be thick or thin, I prefer thick chutney.
Normally, when you make a chutney, you grind all the ingredients together and make it in a paste and you consume it directly. But this south indian coconut chutney has a magic to it. After you grind this to a paste, take it out into a bowl and you need to you need to give a tadka to it.
For tadka you need to heat a pan and add 2 tablespoon of oil and add 2 dry red chilly and 2 tbspn of chana dal and let it roast for a while, add mustard seeds and then add curry leaves and let it heat for a minute and add this tadka to the grinded chutney. Mix it well and your chutney is ready.

DOSA BATTER
For making your dosa, your batter should be in proper consistency. The way your dosa comes out to be totally depend on the batter.
To make a good dosa batter, we need

  • 2 3/4 th cup of parboiled rice which is soaked for around 4 to 5 hours.
  • 1/4 cup of rice which is very short grain, again soaked for 4 to 5 hours
  • 1 cup of urad dal which is split skinless black grams again soaked for 4 to 5 hours.
  • 1 teaspoon of fenugreek seeds soaked.
  • salt according to taste.
    The most important part of a good dosa batter is soaking. So you need to give a proper time to soak.

now there are two ways to prepare tge batter, either you grind all the soaked ingredients individually and later mix it or you grind them all together. I orefer to mix it all together so that it mixes well with each other. This batter needs to be super smooth. So as it starts grinding, you need to add water to it slowly not all together. The consistency should be pouring but it should be thick as well. Just see that we haven't added salt to it yet. So the batter is ready and it need to get fermented properly, this will take around 8 hours to ferment. So probably you could make the batter at night and the next morning you could make it.Before cooking add salt to it.

Buy ready to make batter from a south indian store, I often buy it from a nearby store and make it because I don't have patience.
