Today's triple threat

Leek and potatoe soup, vegan pulled pork burgers with homemade buns, cherry and strawberry nice cream, all vegan and completely awesome.

First up I made some soup, it's well simple to make too.

Ingredients

5 potatoes
1 and a half leeks
4 garlic cloves
3 teaspoons billion powder
1l water
1 cup of plant based milk
Pinch of salt and pepper

First I chopped up 1 leek and the garlic and sautéed, I kept the other half of the leek for right at the end.

Then I added potatoes chopped up and water, salt and pepper.

I just let it boil till everything just fell apart, then I mixed the billion powder with plant based milk and added to the soup with the left over leek which I had sliced up.

And it was nice and creamy.

OK, so I kinda went all out with the burgers by making my own buns, mainly because I knew they'd be healthier than the shop, I used a wholemeal unspelt organic flour with a good ratio of carbs to fibre.

Crispy awesomeness!

Making the vegan pulled pork was relatively quiet easy and tasted fantastic.

Ingredients

300g sliced onions
400g sliced mushrooms
Half a teaspoon ground coriander
Half a teaspoon smoked paprika
2 tablespoons liquid smoke
3 tablespoons soy sause
Pinch of salt and pepper
BBQ sauce

It was just a matter of chucking everything into a baking tray excluding BBQ sauce, and baking till everything dried up a bit and turning now and then.

Then when it's cooked just add BBQ sauce and mix.

Then building a burger.

The nice cream was the best I have made, and it was slap dash too.

Ingredients

400g frozen sweet cherrys
400g frozen strawberry
1 banana
1 cup plant based milk

I just chucked everything in and blended it real good.

I haven't even cleaned the blender, because as soon as I have written this I am off to make some more of that red sweet goodness, so cheers for now and see everyone at #fruitsandveggiesmonday.
