I am becoming more and more of a fan of the humble leek. They can be quite delicious, I think I just didn't grow up with them in our family kitchen so they sometimes escape my notice. Would love to see if you work up a full vegan version! If not perhaps I'll have to get creative over here myself. ;)
Uugghh, so over the media madness. Like you I don't make light of anyone being ill or certainly not passing away from an illness, but the fear and panic is so rampant it is definitely more disturbing in many ways than the illness itself. I think I need a break today with absolutely no news and hopefully as little conversation possible about it. Starting now.😂

Seriously, though, I grew up with leeks. Usually subjected to the death boil with white sauce. Urgh!
Now, I use them quite a lot. Without the cheese, but with the herbs, I have used them as a topping for. flatbreads. I also make a "banting" vichyssoise with leeks and cauliflower. Also on my list of recipes to share. Guests love it. And like the traditional vichyssoise, it can be served cold. Or warm.
Finally, if you don't want the overpowering sweetness of onions, leeks are great.
