Émincé de poulet au potimarron
Une recette simple, rapide et légèrement épicé au curry avec du potimarron et du lait de coco.
- 1/2 petit potimarron
- 1 blanc de poulet
- 20 centilitres de lait de coco
- 1 échalote
- sel, poivre, curry
Escaloper le blanc de poulet.
Enlever les graines du potimarron puis enlever la peau. Le couper en petits dés.
Peler et ciseler l'échalote.
Dans de l'huile d'olive chaude mettre une petite cuillère à café de curry, le laisser frire un peu.
Ajouter l'échalote et le potimarron, laisser revenir environ 5 minutes.
Dans une poêle à part faire sauter vivement le poulet.
Rajouter le poulet dans les légumes et ajouter le lait de coco.
Laisser réduire quelques minutes le potimarron doit rester légèrement croquant.
Pour servir je rajoute quelques amandes effilées légèrement torréfiées à la poêle.
