Master Baking Class with @ albertocotua ( Weekly Series) Issue no 3

Hello Steemers!

We will put into practice the knowledge learned in the Master Class of Steem Kitchen.

Today we are going to learn how to make "Cachitos", a typical stuffed bread in Venezuela for breakfast accompanied by a coffee with milk, a Rikomalt, with a chicha or a natural juice, in short the breakfast dreamed of in my country.

Let's start with the Mise en Place of this preparation. For 4 "Cachitos" we will need:

Elaboration on the technical data

The ingredients I used to make these Cachitos:

The flour that I used is 000 with 8-10 grams of protein.
The water that I used is reverse osmosis or without sodium.
common salt
Instant yeast.
Sugar.
Margarine.

Step 1: Mise En Place

Step 2: Kneading.

Once we have the Mise en Place, we proceed to mix all the ingredients in this order:

Dried with dried (flour, sugar, salt, instant yeast, milk powder) and to these dry we add the moist, which are the remaining ingredients LESS THE BUTTER!

When we have a homogeneous mixture, remove it from the bowl and put the dough on the table to add the butter little by little until you have a smooth dough.

When we finish adding the butter, we proceed to perform the gluten test, the popular "membrane test"

This is how the dough ends when the butter is added.

Step 3: Primary Fermentation

Then proceed to perform the initial fermentation, remember that it is the most important.

Step 4: Degassing.

After 60 minutes of the initial fermentation, we proceed to degassing and dividing the dough into 200gr portions exactly.

Step 5: Division.

Step 6: shape it and Step 7: Rest.

Ok, in the forming stage we are going to give it an initial shape of bun, leave it for 15 minutes resting for the gluten to relax and then proceed to give it, its final shape with the help of a rolling pin.

Step 8: Molded.

After 15 minutes, we made these 4 steps with the roller to give shape to the cachitos.

Pay attention.

When we have this form we proceed to fill and roll the bread.

Step 9: Final fermentation.

At this time we preheat the oven.

While the cachitos are in their final fermentation, we proceed to make the varnish using:

  • Yolk.
  • Dark vanilla
  • Water.

Mix and with the help of a brush we smoothly paint the surface of the bread.

After 45 min of final fermentation, we painted the Cachitos with the previously prepared varnish and took it to the pre-heated oven.

Step 10: Baked and Step 11: Cooled.

After 20 min baking, these beauties come out.

We let them rest 20 min and cut them, now to enjoy.
