Another family recipe, this one belonging to my great-grandmother once more. My grandmother would make this in the summers with the fresh fruit we could get from the farmer's markets up there and the like. It's even a great fall treat with apple slices from the local orchards, honestly. And to top it off, this is easy as heck and makes a great treat for parties!

This is also, of course, an entry for the latest contest from SteemKitchen focusing around snacks. This is a great snack food that's also mostly healthy, and best served cold to ward off the nasty summer heat.

You'll Need The Following;

  • 1 cup (2 sticks) butter at room temp

  • 1 cup brown sugar, lightly packed

  • 1 egg

  • 1 teaspoon vanilla extract

  • 2 1/2 cups flour

  • 1/2 teaspoon salt

  • 1 pint of heavy cream

  • 6 tablespoons granulated sugar

  • 2 teaspoons vanilla extract

  • Fruit of choice!

Now I'll be honest, the strawberries alone are enough for like half of one of these. I had way too much fruit because I haven't made this in ages and over estimated how much I'd need, so I ended up just using the kiwi, grapes and pineapple and freezing those strawberries for smoothies later so nothing went to waste <3

You can also omit the heavy cream, sugar and vanilla in favor of two tubs of cool whip or something similar if you like, I just prefer to make my own whipped cream because it's easy and I know what's in it.

First step, as usual, is to preheat your oven to 350 degrees Fahrenheit.

While that's going take your butter and sugar and cream them together in a bowl.

Add in the egg and vanilla extract, and mix it again until it's well blended.

And finally, add in the flour. Once you mix it in like that the dough should be nice and ready like a bread dough. If it's sticky when you pick it up add a little more flour and keep mixing until it isn't.

Grease up a 13" x 9" pan and press the dough out into the bottom of it. Then shove it in the oven for about 15 minutes.

If you're making your own whipped cream do that while the crust is baking. Just mix the whipping cream, sugar and vanilla together and beat them until the mixture is nice and stiff. You should be able to swipe a finger through it and the dent should hold its shape when you do.

I added some food coloring to make it blue for my roommate's favorite color, but you can leave it white for a more traditional look or make it whatever color you like.

Once the crust comes out of the oven allow it time to cool completely before moving on.

Put your whipped cream over the crust, then layer in your fruit and bam you're done!

A nice slice of kiwi fruit pie. Cold and refreshing after a hot day, and the perfect kind of sweet I crave that takes my mind off chocolate at night or after dinner as well ^^
