Kitchen Witch Thursdays - Pumpkin Cake with Maple glaze
It's late August, and so it's fall in my eyes! That means time for pumpkin spice and pumpkin flavored everything, including my favorite fall pumpkin cake with maple glaze. A recipe of my own making from experimenting over the years, and while it has some steps it's not as complicated as it seems. I love having a piece in the evenings with tea or mulled cider as I'm winding down as well, it's just all around a lovely cake.
You'll need the following;
For the cake
- 2 cups flour
- 1 cup granulated white sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 egg
- 1/2 stick (1/4 cup) butter
- 1/2 cup milk
- 1x 15oz can pumpkin puree
- 1 tablespoon pumpkin pie spice
For the crumble topping
- 1 cup chopped walnuts
- 1/4 cup flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 stick (1/4 cup) butter
For the glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon maple flavoring
Like I said seems complicated, but I promise it's not! My roommate was concerned when we bought the maple flavoring, but honestly as long as you use it in moderation like anything else you can't taste it. I brought up the point that we have imitation vanilla extract and he hasn't complained about it any of my food so far because I always try with the recommended amount for a recipe and only add more if I really need to. I'm also super sensitive to fake/chemical flavors so I know better than to go overboard or else I won't want to eat it either :/
Preheat your oven to 350 degrees.
Make up your cake batter by tossing the flour, sugar, baking powder, salt, egg, butter, milk, pumpkin puree and pumpkin pie spice in a bowl and mixing it up. Should have the general consistency of cake batter.
Mix up your crumble topping with the walnuts, flour, brown sugar, cinnamon and butter. Mix it until the butter coats everything and makes the flour, brown sugar and cinnamon stick to the walnuts.
Pour the batter into a greased 13x9 pan and sprinkle the topping on it. Put it in your now preheated oven for 45 minutes.
Once it comes out make sure it's done by sticking a toothpick/fork/knife/ect in it and if it comes out clean you're good, if not try it for 5 more minutes at a time until it is done.
Set the cake aside and allow it to cool completely before moving on to making the glaze.
Mix together the powdered sugar, milk and maple flavoring to make your glaze. This glaze would be white, but the maple flavoring turns it slightly brown which fits more with the them of the dish as well.
Spread the glaze all over your cake and give it a few minutes to harden.
Slice, eat, and enjoy!
This is meant to be a slightly dense cake as shown, but it's so good. You can sprinkle extra walnuts on top for more flavor and crunch if you like, or just eat it as is :)

The funny thing is - that I'm almost positive that if I were to try this - it'd come out looking nothing like this! But that's how some food recipes were created - that is: by accident!
Believe me, that's what happens 80% of the time I try to make something; it comes out nothing like the pictures! But a lot of that is just my lack of technical skill and photography skill because I focus more on my food tasting good than I do on the presentation due to being a home cook. As long as it tastes good the appearance is less important, though I have created a few things on accident too that were just as good XD
