SteemKitchen Recipe Contest 7 (Week 4 : Snacks ) Mini Flapjacks Garden
So it's time to party and what is our favourite party fare - snacks of course! We need to mingle and have a hand free for a glass of ice cold beer or a good wine; yes it's time to celebrate!
Here in South Africa we like to contribute towards the festivities, so it customary to take along a platter of finger food, as it's sometimes called; makes life so much easier for the hostess!
Running a guesthouse/bnb can get real hectic at times, especially when guests opt out of self catering!
I however still enjoy spoiling them on a Sunday morning with a platter of Flapjacks, and that is how my mini Flapjacks Garden was born!
One can whip these snacks up in no time with basic pantry staples, so no sweat if you're busy and have no time to run out to the stores but need to take something along to the party tonight!
Mini Flapjacks were topped with a delicious Tuna, Parsley & grated Onion mayo filling, alternating with finely grated Cheddar Cheese & cooling Cucumber.
Prep time: 30 min
Cooking time: 30 min
Yields: 48 mini flapjacks
Ingredients:
- 3 Eggs
- 3 tablespoons brown Sugar
- 375 ml Self-Raising Wheat Flour
- 5 ml Baking Powder
- Pinch Salt
- 250 ml Buttermilk
- 25 g Butter, melted
Toppings:
- 1 can Tuna, flaked & drained
- Parsley, finely chopped
- 1 teaspoon Onion - grated
- 100 ml Mayo
- 1 cup Cheddar Cheese - finely grated
- Cucumber sliced & halved
- Beat together eggs & sugar.
- Sift dry ingredients and add to egg mixture alternatively with buttermilk & butter
- Drop small spoons-full into a lightly oiled crepe pan, turn when bubbles form
- Cool on wire rack
- Mix tuna, parsley, onion & mayo together & spoon onto flapjacks.
- Grated cheese & Cucumber slices on the balance.

Nicely cooked on both sides and the kitchen party is on it's way
Press into regular shapes with a cookie cutter - the off-cuts will never go to waste!
