Celiac

Celiac disease (gluten-sensitive enteropathy), sometimes called sprue or coeliac, is an immune reaction to eating gluten, a protein found in wheat, barley and rye.
If you have celiac disease, eating gluten triggers an immune response in your small intestine. Over time, this reaction damages your small intestine's lining and prevents absorption of some nutrients (malabsorption). To be honest I did not even know that this disease was called that way, for this reason I was interested in doing something special for those people who should refrain from eating different foods because they suffer from this disease. On the other hand I also understand that it is very healthy to eat gluten-free foods to have a healthier diet, so try to try it, as long as you ask for help from a nutritionist

In particular, I love them all in the afternoons, which is the time where we feel like something delicious. I am not a celiac person but since I made this recipe I am fascinated they are very simple and they have only

5 INGREDIENTS

200 grams of butter
250g of gluten-free flour
1/2 cup of sugar
1 egg
1 spoon of vanilla

For preparation
First you have to mix the butter with the sugar very well (you can beat it with a hand or electric mixer) then add an egg and beat until integrating, then add the GLUTEN FREE FLOUR until you get a mixture a little thicker, more or less like this

After obtaining a mixture like the one shown, make balls with a spoon of ice cream or with two common spoons, they are taken to a previously ignited oven, they will see that in the oven they expand themselves. When they are golden brown they can be taken out of the oven and they will be a little soft but when they get cold they will harden taking the texture of cookies
