Using Leftovers Splendidly
So Some times you take a chance and it does not impress. Well then take the left overs and make a Hard Fork to something very different. That was the goal here, taking an apple beet taco and making it more edible.
Ingredients
- Spanish Rice ( Oil browned rice cooked with 1 diced tomato and tons of cumin a touch of salt)
- Re-fried Beans( Pinto beans cooked in flax oil, then baked in oven then mashed)
- Beets with Apples ( cooked in oven at 350 with coconut oil)
- Romaine Lettuce
- Raspberry Vinaigrette
The sweetness of the raspberry vin went much better with the beets and apples then cilantro and salsa. This worked well even with the refried as the protein and rice for filler. The tacos left a hunger, but this sandwich hit the spot.
