SSC week 60, storm then hardfork catchup

So good I had too show it off. So the last few weeks has had hurricane Florence, steemit block me from posting (and many of us) amd now my house broken into and robbed(no computer for awhile im guessing) So from my phone I post sideways pics with lower quality for the love of this recipe.
diced mushrooms with herbs and spices cooked in beet stock and oil.
romaine heart bottom finely diced with onion marinated for 4 hours in raw applecider vinegar.
Topped with cashew cheese and baked for 5 min.
Then topped with slaw and thousand island.
You just proved to be one of the toughest Steemians ever!!

Bummer your house got broken into, sorry to hear that. Wow! I could not tell this was vegan because the mushrooms cooked in beet juice looked just like meat, brilliant! I've never seen cashew cheese that looks just like mozzarella. Good luck!

As for this sandwich, some nice love went into this. Love the 4 hours of marination for the hearts and onions and also the cashew cheese bread. Great distinct ingredients and also love he take on a classic rueben !
