SSC week 51. Beet and apple openface.
Beets are the best. This sandwich Is a play on my first entry for SSC. Which are both plays on a sandwich I had regularly at Trattoria Stella when I worked there years ago. It was before I was vegan, but while transitioning into a pescatarian. A daily special was the Vendura. And a good man made it important to have a good vegetarian option. So I have used his base as my base for this ever changing combo for years.
Ingredients
- Beets
- Apples
- Brussel sprouts
- Chic Peas
- onion, Himalayan salt, pepper and garlic salt
- BBQ Sauce
- Cooked with Evoo
Start with roasting beets. Then Dice and add brussel sprouts and apples. Roast and Chic peas and chop with salt and garlic salt.
Layer it up and roast flavors together for a short time. Enough to melt cheese for your non vegans.
Either way very enjoyable.
16th week. So many recipes. So much great food and improvements. Will be taking a few weeks off for a vacation to a place with very little internet(Northern Michigan.) Cant wait to see what I miss.

Love those beets, especially roasted. The chick peas and brussel sprouts really add to that earthy taste. Nice zing to add the bbq sauce! Nice! Have a great vacation!
