SSC Week 49. BLT Vegan style

Eggplant trying to be bacon with fried tomato and arugula

So I saw somewhere where i could slice eggplant and season it enough that it could replace bacon. I will say meat eaters will not be happy, but I was thrilled with this ELT sandwich.

• Eggplant Thin Sliced
  
• Dipped in Equal parts Soy, BBQ, and Teriyaki. Then about half syrup. Bake at 450 for 45 minutes.
  
  
• Thick sliced tomato
  
• Beer battered and then dipped in flour,salt and pepper and cayenne pepper
  
• Then fried hard in evoo

Take each side of bread and cover with mayo. I put thin sliced raw onion down before eggplant. Then eggplant and arugula. On top slice gets the fried tomato. And a vegan BLOT is here. Or whatever.
