Thank you, I like your idea of replacing the sugar, but I wonder if dried fruits would caramelize properly? Maybe some realy ripe Medjool dates instead?

re talking proper candy material :)good idea! Otherwise, if I were making it, Id soak the dried fruit in some boiling water to rehydrate it and blitz it along with the tomatoes. I`d use balsamic vinegar to deglaze the onions (let them caramelize slowly) for extra sweetness.
