Steemit Sandwich Contest Week # 8 (Spinach Theme Sandwich – 4th Entry): Spinach Pesto Tomato Mozzarella Sandwich
I love Italian food and one of the reasons is because of its simplicity, with many dishes having only a few main ingredients. I noticed Italian cooks rely mainly on the quality of the ingredients rather than on elaborate preparation.
In particular, I am a big fan of pesto which consists of basil, pine nuts blended with parmesan cheese and olive oil. Ever since I started making sandwiches for this contest, I have been longing to make a simple pesto sandwich with a twist.
Since spinach is the theme for all my sandwiches this week, I thought a Spinach Pesto Sandwich should be in order. Yes, I am going to use spinach, instead of basil to make a simple but yet flavourful sandwich.
Really, you cannot go wrong to pair this simple spinach pesto with mozzarella cheese and tomato. Just think about the colour combination - green, white, red (i.e. the Italian flag) puts a big smile on my face.
For the spinach pesto, I blended spinach, chopped almonds, olive oil, parmasen cheese, garlic and salt.
For the sandwich, I slathered pesto on ciabatta rolls, layer with mozzarella cheese and baked in the oven for 5 minutes. After that, I topped with Tomato and that was it.
It was such a satisfying and delightful sandwich that I made two for myself :) Sometimes ‘keep it simple stupid’ is so necessary!
