Steemit Sandwich Contest Week # 8 (Spinach Theme Sandwich – 3rd Entry): Spinach Meatball Sandwich

Come think about it, spinach is one of my favorite vegetables as well as one of my frequently used ingredients in my cooking. Quite frankly, I could make a spinach sandwich every day.

This week, we have cut down the consumption of meat significantly, except for the chicken soup my husband made me. I see that my husband is quite liking the meatless dishes this week. Therefore, I made a fake meatball dish today - the Spinach Meatball Sandwich.

The Spinach Meatballs are relatively easy to make. All you need is to prepare the mixture and bake them in the oven. After that, assemble the sandwich to your liking. I had used the following ingredients in the meatball mixture: chopped steamed spinach, eggs, cheddar cheese, chives, italian breadcrumbs, garlic powder, salt and pepper

I also prepared a tomato salsa by cooking chopped tomato in tomato paste, and then threw in all kinds of veggies I found in the fridge (green peppers, garlic, chives, salt and pepper). I was inspired by the real meatballs in tomato sauce (yummy).
