Steemit Sandwich Contest Week #66 - SteemFest3 SteemBread Kanapki

If only I could have teleported myself to Kraków this week and gotten a glimpse of all the action at SteemFest3, but it was not to be!
I can just imagine the mixing of cultures with everyone in the same time zone for a change, and of course the food must have been amazing! Sandwiches for sure would have been on the menu, @jaybird certainly made a humungous Polish meaty manwich which must have been the envy of many.

My SteemFest3 sandwich is a real mix of cultures - delicious soft and spongy traditional South African Umeqe - SteemBread, no guessing it's a steamed bread; forms my Kanapki base - a Polish open sandwich. Topped with grated Burak Salad - Beetroot, which is said to run in the veins of all the people of Poland ;) Then a flavourful Kiełbasa Grillowa - Smoked BBQ Sausage and lastly a crispy crunchy Placki Kartoflane or Placki Ziemniaczane - Potato Pancake which I made with grated Potato, Spring Onions & grated mature Cheddar Cheese. Sliced Cheese wording which I cut out to depict this week's contest as a final touch.

Before I show you the unique way the Zulu people make this fabulous SteemBread, I'd like to give you a very brief bio about it.
Ujeqe as it's called in Zulu or Steam Bread as we know it, has been made by rural women for yonks.
I was first introduced to it by a work colleague when we celebrated Heritage Day, a public holiday here in South Africa. It's absolutely delicious and nowadays our housekeeper Sibongile occasionally makes it for us as a treat!
Ujeqe served on a wooden platter with meat is a must at traditional Zulu ceremonies or celebrations.

UJEQE

  • 3 1/2 cups Flour - half brown/wholemeal and half white
  • 1 teaspoon Salt
  • 4 tablespoons Sugar
  • 10 gram dry Yeast
  • Approx 400ml lukewarm Water

Method
1. Mix dry ingredients, slowly add water and knead till a smooth ball forms

2. Place in a warm place & leave to prove till double in size - I placed it in my Wonder Bag

3. Knock down dough, shape into a round ball and place into buttered stainless steel or pyrex bowl - note the dough traditionally is placed straight into a plastic bag for steaming, not sure how healthy that is though!

4. Place bowl with dough inside a clean plastic shopping bag, tie into a loose knot

5. Place in a deep pot of water, close lid tightly and leave to steam for about one and a half hours

6. Remove packet from pot, open plastic bag and carefully turn out

KANAPKI

  • 1 slice SteemBread, buttered
  • Grated Beetroot salad, drained very well
  • 2 Smoked Bacon & Cheese Sausages, cut in half lengthwise
    Potato Pancake
  • 1 Potato, grated
  • 1 Spring Onion, finely diced
  • 1 Egg
  • 50ml Self Raising Flour
  • Salt
  • 100ml mature Cheddar Cheese, grated

Mix pancake ingredients together, shape into a flat pancake & cook in a lightly oiled hot pan

Place well drained Beetroot salad on top of buttered SteemBread - don't want too much red juice flowing into the bread

Grill or pan fry sausages & place on top of beetroot
