Vegan Mediterranean spread

Ingredients for bread:
700 g of flour
20 g of fresh yeast
1 teaspoon of sugar
4 dl of warm water
1 teaspoon of salt
1 tablespoon of olive oil

In a small bowel combine 5 tablespoons of flour, 2 dl of warm water, a teaspoon of sugar and 20 g of fresh yeast and let it rise in a warm place (30 to 35°C). It takes about 10 to 15 minutes.
In a large bowl mix 700 g of flour with a teaspoon of salt, tablespoon of olive oil, 2 dl of warm water and risen yeast. First mix it with a wooden spoon then cover it with a kitchen cloth and let it rest in a warm place to rise for 10 to 15 minutes. Knead the dough again with your hands, use more flour if needed then put it in your baking tray and let it rest in a warm place again. The dough is ready to get in the preheated oven when it reaches about 1.5 times of the original size. Stick your index finger in the dough: if it does not roll back and the hole remains in the test, the dough rose enough.

Bake it on 200°C for 30 to 40 minutes. I used baking thermometer. The bread is done when it reaches 100°C on the inside and it has a nice golden-brown color crust. Cover it with a wet kitchen cloth and let it cool.

Ingredients for vegan Mediterranean spread:
200 g of sun dried tomatoes
1 ‘Sweet Cluster’ tomato
100 g of cherry tomatoes
a teaspoon of olive oil
few drops of lemon
100 g of sunflower seeds
50 g of black olives
2 garlic cloves
few capers
fresh basil
thyme
a pinch of turmeric
red sweet smoked paprika
a pinch of black pepper
a pinch of salt

First blend 100 g of sunflower seeds with a teaspoon of olive oil and a few drops of lemon. Put 1 ‘Sweet Cluster’ tomato and 100 g of cherry tomatoes in a hot oven for five minutes. Take it out of the oven and peel away the skin. Chop them, put them in a blender and blend it. Pit 50 g of black olives and add them into the blender. Chop 2 garlic cloves and also add them in the blender. Add a few capers and a few fresh basil leaves and blend it. Put it in a bowel and add some thyme, pinch of turmeric, a teaspoon of red sweet smoked paprika, pinch of black pepper, a pinch of salt and mix it.
I made my weekly sandwich using sliced scallions and a few leaves of young lettuce.
