Steemit Sandwich Contest Week #49 | Bacon Wrapped Bison Burger with Everglades Cactus Dust!

Good day my fellow Sandwich Elves! Yet another week has passed and it is time for Week 49 of @jaybirds Steemit Sandwich Contest.


He says it’s a Royal Rumble of a week, anything goes! So before we get going I want to thank @jaybird for again hosting and sponsoring this contest. We always have so many excellent entries, I know it must be tough to choose.


This week I was really in the mood for a burger. You know, I don’t have too many weaknesses but I do like an occasional burger. I’m back from visiting my daughter, settled back in my own kitchen and ready to cook! I’m thinking a burger with a southwestern flare…how about Bison? It’s very lean, rich and makes a mean burger!

Bacon Wrapped Bison Burger with Everglades Cactus Dust!

I Used

  • Organic Ground Bison
  • Cherry Smoked Bacon
  • Onion
  • Fresh Garlic
  • Extra Virgin Olive Oil
  • Avocado
  • Fresh Lime Juice
  • Everglades Cactus Dust
  • Worcestershire Sauce
  • Cayenne Pepper
  • Salt/Pepper
  • Tomato
  • Cilantro
  • Pepper Jack Cheese
  • Wiggles Dirty Dill Pickles
  • Mayonnaise
  • Cowboy Hamburger Roll

Prep

  • Slice onions and saute with minced garlic until translucent. Sprinkle with cayenne. I like to saute the onions ahead of time and then combine with the bison. This gives a bit more flavor and moisture to the onions as they cook with the meat!

  • When onions are cool enough to handle, combine with bison in bowl and mix thoroughly. Add Worcestershire sauce, Cactus Dust, Pepper and Salt. Combine well.

  • Now its time to patty up the bison mixture and wrap one slice of bacon around burger. Use a toothpick to make sure the bacon stays in place! Sprinkle a bit more cactus dust on top! You won't be sorry!

  • Grill! Place cheese on top for last 2 minutes. Toast the buns!

  • While the burgers are cooking, I made the guac! Mash avocado, add chili powder, diced tomatoes, onions, salt, pepper, lime juice and chopped cilantro.

  • Dab a little mayo on the bun, layer your burger (remove the toothpick!), guac on top! And Serve! Oh, don’t forget the Pickles!

  • Take a load off and enjoy! Mr. Bird was one happy Cowboy!

Yup, bacon wrapped bison! I think you would love it. The cactus dust has a mesquite taste to it and those dirty dills pack a nice dilly punch. Prep really wasn't much, it's fun to create , right? Thanks so much, you always have such kind and encouraging words.

Well that's one thing I've never ever eaten - bison!! What does it taste like? We obvsiouly don't have them here...

Well, It has a very mild flavor... not harsh like beef. It is lean, so adding the sauteed onions added moisture. It was rich, something I can't eat too often :) I think the bacon wrap sealed in a lot of the flavors! I hope you'll be able to try it some time soon!

Mmmm now that is SOME burger. I haven't tried bison meat though. If we can splurge on getting us organic bison meat, for sure, we'll make bison burger.
