Steemit Sandwich Contest Week #38 | Mesquite Smoked Pulled Chicken with Fresh Pineapple. It's Smokin Hot!

Hello Fellow Steemian Sandwich Lovers!

I’m so excited to submit my entry for @jaybirds Week 38 Sandwich Contest! Do you smoke meats? We do and love it! The flavors retained using a smoker are amazing. You can used mesquite, pecan, apple...so many soaked woods in your smoking and the results are wonderful!

Today, I am sharing another family favorite. We are visiting our daughter and her husband who are shortly having their first child. We hosted their baby shower so we arrived a couple of days prior to the baby shower and spent the next 2 days cooking food! I decided Smoked Pulled Chicken would be a great sandwich to have at their shower.

We have always loved smoking meats, chicken and fish. Thanksgiving turkey has been smoked for many years (so stay tuned for that one!) Smoking food not only adds a special flavor but keeps the protein moist!

Today we’re making:

Mesquite Smoked Pulled Chicken with Fresh Pineapple! It's Smokin Hot!

So let’s get started!

Ingredients

  • Espresso beans ground
  • Sea salt
  • Coconut sugar
  • Cinnamon
  • Garlic Powder
  • Cumin
  • Cayenne Powder
  • 3 Organic whole Chickens
  • Fresh Pineapple
  • Fresh Brioche Rolls
  • Organic Mayo
  • Smokin Attitude
  • Mesquite Chips for Smoking
  • Arthur Bryant Barbecue Sauce (and it's HOT!!)

The Prep...

Prepare your smoker now! Allow about 30 minutes for the coals to get hot! We use a water smoker with charcoal and soaked mesquite chips. This adds an amazing flavor and taste when you smoke the birds!
Wash Chicken thoroughly. Pat to dry. Set to the side.

Now we need some Smokin Rub!

Combine Espresso beans, salt, sugar, cinnamon, garlic cumin and cayenne.

Liberally rub the mix on the Bird! Don’t skimp now!

Place birds on smoker and smoke for 7-8 hours. Do

Oh my, they smell unbelievable!

Smoke until internal temperature reaches 160.

Remove the birds from smoker and let them cool a bit. This allows the juices to be retained in the bird before pulling. Keeps them juicy!

Now we pull the chicken. Unbelievable…better taste a piece of this.

Let’s make that sandwich! Don't forget the Pineapple! Add that Arthur Bryant Sauce!

Now it's ready to eat, and it's Hot!! Do your happy dance and have a bite!

Fresh pineapple adds a little tangy excitement to the smoky and spicy sauce and chicken.

I love the use of espresso beans in that rub. It sounds great. And I always love pineapple in savory dishes. Nicely put together!

Big supporter of smoking!! Quite a lot of organic ingredients going on there and also love the spice mix u made there, I can imagine that those flavour go well together!

Yes, I think smoked foods are so fun to play with . The flavors layer so nicely, very rich sometimes so you have to be careful right? The spice mix was a good combo with it. Thank you @alansthoughts!
