Steemit sandwich contest week 39: its all about roasting

Greetings to my dear readers,
Today I'll be roasting all my spring vegetable. Have you ever wonder why meat taste so good? Well if not, I have the answer for you. Meat taste the best when it's cooked under very high heat, creating a nice crust. This crust is extremely flavourful due to the reaction of protein and sugar in the meat called Maillard reaction. So when people say vegetable cannot have the same savouriness as meat, it's to me a misconception. You see, you can create a similar reaction of Maillard reaction that happens in meat with vegetable, especially vegetables that are high in sugar. This process is called caramelization. What this mean is that the sugar in the vegetable breakdown to a much more simple chemical structure which we call caramel. This happen when sugar structure is physically altered by heat. The taste we get from this is highly similar to that we get in browned meat. So having that knowledge in mind, I have decide to intensify and boost the savouriness of my spring vegetable by roasting them with low temperatures for a long time. The two special spring vegetable I would be using are sweet potato and pumpkin. What else better way to enjoy such fresh ingredients then roasting it right? Let's get to the sandwich!

I present to you: cabbage roll

Roasted pork brisket, roasted pumpkin, roasted pumpkin seeds, twice cooked sweet potato with homemade sweet and sour sauce.

These are the spice I use to marinate the pork with ; black pepper, soy sauce, fish sauce, sugar, salt, black pepper, tomato purée

I let it marinade for 3 days before heading for roasting

What you are seeing are pumpkin, sweet potato and pumpkin seeds. Usually people throw the seeds alway but I find it such a waste so I roast it together.

Twice cooked sweet potato: firstly it was baked with the other vegetable and then deep fried in tempura batter, just so my special sauce can cling to it. Some extra tempura batter fried as a snack!

Blanched cabbage

The cabbage is blanched in a flavourful stock for additional flavour as well as making it more flexible to work with. The stock includes, soy sauce, rice wine, Chinese five spices, Chinese rice wine, sugar, pork bone stock, salt

Constructing the sandwich

1. A splash of sweet and sour sauce
( chille purée, sugar, salt, lime , fish sauce)

2. Add shredded roasted pork

3. Add Thinky slice raw onions

4. Add roasted pumpkin

5. Add tempura sweet potato

6. Add pumpkin seeds and more sweet and sour sauce

Roll it up and we have the final product! And of course served with sweet and sour dipping sauce!

You put so much work into that . I love that you marinated for three days, although I don't eat meat, I still appreciate all the steps you have taken and the flavors that you add. I love pumpkin and sweet potatoes and roasted pumpkin seeds are great!
