Kitchen Witch Sunday - Cookies and Cream Pudding Pops
Another recipe from my cousin, because he doesn't have an ice cream machine but wanted something ice cream-like to help beat the summer heat. Man's a genius, I swear it. I make these all the time in the summer because they're cheap, easy, and tasty as all get out. Plus with all the flavors of available in the ingredients it's easy to customize them to flavor preferences.
You'll Need The Following;
- 2 packs of Jell-O instant pudding
- 4 cups of milk
- 1/2 pack of Oreos
The pudding can be any flavor you like, I just prefer chocolate and vanilla to be plain. They have flavors like cheesecake and even pistachio these days. Same thing with the Oreos; the double stuffed pictured were just on sale, but with flavors like red velvet and birthday cake those are easy to customize to flavor preferences too!
No baking required, unlike most of my other recipes. Just make the pudding like the directions say, which is generally about 2 cups of milk per packet, stir it for 2 minutes, then let it sit for 5 to get soft set. When you can swipe a finger through and the lines stick instead of collapsing on themselves like shown they're good to go.
Take your Oreos and crumble them. I just put these in a baggie with a rolling pin and rolled over them a few times then hit them with a meat tenderizer to break them up. Distribute evenly between the puddings and mix well.
Pop the pudding in the molds and stick a popsicle stick in them. I varied these, with most being vanilla on the bottom layer as shown and having chocolate and vanilla layered inside of them. These are just silicone molds and they're actually Christmas trees but those were the only deep ones they had. I'm pretty sure you can get cheap plastic or silicone ones in the more classic shape, but we made due with what we had so there's that.
Give them a few hours in the freezer and they should come right out. If you've got sensitive teeth and don't like to bite into cold stuff these might not be for you, they don't really melt and licking them doesn't do much. But they're a nice, easy way to beat the heat when summer hits. Like literally under $10 to make these and that accounts for the pudding, milk, cookies, mold and sticks. Not exactly ice cream, but the next best thing if you don't have space or money for an ice cream maker in your home.
