STEEMIT CULINARY CHALLENGE # 29 SWEET & SALTY GREEK BRUNCH (SWEET BOUGATSA & KAGIANAS WITH FETA & CONVERGENT MANI)

This is a complete Greek traditional brunch ! with extra cripsy , super creamy Bougatsa with spicy Kagiana !

Bougatsa

Ingredients

  • 2 paff pastry sheets
  • 1 cup fine semolina
  • 2 cups water
  • 1 cup granulated sugar
  • 2 tablespoons butter
  • 1 tablespoon vanilla extract or 4 packets of vanilla powder
  • icing sugar and cinnamon, for dusting

Method

  • preheat oven to 200C (390F)
  • using a pastry brush, brush a baking pan generously with butter
  • place in the baking pan a sheet of paff pastry
  • prepare the custard
  • place a saucepan over medium heat and add water, fine semolina, sugar and vanilla extract
  • stir continuously and vigorously, until the mixture begins to thicken
  • when the mixture thickens enough, remove from heat
  • add the butter and stir until the cream is smooth and shiny
  • transfer and spread the custard over the puff pastry sheet into the baking pan and cover with another sheet
  • bake for about 40 minutes in oven to 200C (390F) , until golden
  • when ready remove from oven and set aside to cool for a bit
  • cut into small pieces and sprinkle with cinnamon and sugar

Kagiana

Ingredients

  • 4 organic eggs
  • 2 cups ripped tomatoes, grated
  • convergent Mani
  • 150g feta cheese, crushed
  • olive oil
  • a pinch of sugar
  • freshly ground black pepper
  • salt
  • 1 small fresh hot pepper
  • fresh basil

Method

  • heat a medium frying pan over medium heat, add the grated tomatoes and cook until most of the juices have evaporated
  • add sugar
  • add olive oil and stir
  • in a bowl beat the eggs, feta cheese, salt, convergent Mani, ground black pepper, fresh hot pepper and stir
  • pour into the pan with the tomatoes and stir with a wooden spoon, so that all the ingredients combine
  • cook stirring continuously for about 7-8 minutes
  • remove from heat and serve with fresh basil leaves and ground pepper

I would love to! Actually my hometown was founded by ancient Greeks, it's called Kerch now, but back in the day it was Panticapaeum :)

Aha ! colonists from Miletus ! Actually these guys traveled 2.000 km to get to Kerch ! that was a long road ! ^^

I bet, taking into consideration it was like 2500-3000 years ago, hell yeah that was quite a journey! I wish I could time travel!

I am looking also for a time travel machine! if you find one dont forget it ! hehe

Wow ! The Greeks know how to prepare a brunch! Those bougatsa look amazing!

Well this actually is a little heavy one ! but its one of the tops :) give it a try its 10min preparation ! you gonna love it

I'll see if I can find some puff pastry to make your brunch! Made it once myself but with the hot temperatures here it's not easy since you have to keep it cool or the butter melts... so you have to keep it on ice all the time. Have a great day!
