Lush pancakes on vegetable milk
Ingredients
✦ 1 Cup whole grain flour
✦ 1 tablespoon cane or coconut sugar
✦ 1 teaspoon baking powder
✦ 1/8 teaspoon fine sea salt
✦ 1 Cup soy milk (or other vegetable)
✦ 2 tablespoons vegetable oil (olive or coconut oil can be used)
Method of preparation
- Sift flour with baking powder. In a large bowl, mix flour, baking powder, sugar, salt. In another bowl, mix milk and butter. Pour the liquid mixture over to the dry ingredient and stir until smooth.
- If you use a non-stick frying pan, you do not need to lubricate it with oil. If not, lubricate it with a small amount of oil using a brush. Fry the pancakes on a hot pan, pouring ½ ladle of dough on it until bubbles appear, then turn and fry for about a minute.
- Serve with your favorite toppings!
