Lush pancakes on vegetable milk

Ingredients
✦ 1 Cup whole grain flour
✦ 1 tablespoon cane or coconut sugar
✦ 1 teaspoon baking powder
✦ 1/8 teaspoon fine sea salt
✦ 1 Cup soy milk (or other vegetable)
✦ 2 tablespoons vegetable oil (olive or coconut oil can be used)
Method of preparation

  1. Sift flour with baking powder. In a large bowl, mix flour, baking powder, sugar, salt. In another bowl, mix milk and butter. Pour the liquid mixture over to the dry ingredient and stir until smooth.
  2. If you use a non-stick frying pan, you do not need to lubricate it with oil. If not, lubricate it with a small amount of oil using a brush. Fry the pancakes on a hot pan, pouring ½ ladle of dough on it until bubbles appear, then turn and fry for about a minute.
  3. Serve with your favorite toppings!
