Candy Making - Penuche Fudge // Permen Gula Palem

I loooveee fudge, how about you?

I got this candy making book and I saw a fudge I never knew before, made of brown sugar. Sooooo, the other day I veganized it and it turned up sooooo good, am hooked.

This fudge is known as Penuche, and seriously, this was the first time I ever heard and learned about this kind of fudge. All these times, fudge was always chocolate based for me :D

Di luar tuh ada permen berbahan dasar cokelat yang dikenal sebagai "fudge". Nah aku ada satu buku resep di perpustakaan di rumah, khusus untuk buat permen, dan nemu fudge bernama "Penuche", terbuat dari gula merah. Tertarik lah, soalnya fudge ini tidak menggunakan cokelat. Jadi yah kucoba dan ternyata enaaaaak deh. Jadi tempo hari aku buat lagi, buat hantaran ke rumah sakit hehee

I made a second batch to be added to the Christmas hampers I prepared to gift-away, among the other candies :D

But yes, for today's posting, I also do not have many pictures to share as I did not take any step-by-step pictures, however I recorded it :) It's a very simple recipe and I bet you will not fail making it should you give the recipe a try :D

Karena belakangan ini gi sibuk banget di dapur, jadinya ga sempat foto-foto untuk setiap langkah. Adanya tuh aku rekam bikin video, biar sekalian bisa ku unggah ke YouTube wkwkwkwkw Satu dayung dua pulau maksudnya hehehe Jadi harap maklum tidak berfoto-foto seperti biasanya. Tengok videonya aja yak, ga panjang kok, karena emang bukan niatan buat dTube, jadi ga bertele-tele videonya hahahahah



You will need a candy thermometer for this recipe by the way, or if you know a soft-ball stage in candy making, then you should be okay without.

- 1 1/4 c coconut palm sugar (or brown sugar, light)
- 1/3 c evaporated coconut milk
- 1 tbsp light corn syrup
- 1 tbsp vegan margarine
- 1 tsp vanilla essence
- 1 handful walnut, chopped, should make 1/2 c
- Bring sugar, milk, syrup to a full boil, until thermometer reads 238 F
- Take off from heat, drop in margarine and essence, let stand for 10 minutes, do not stir
- Beat in chopped walnut and keep beating (with spoon) until candy looks less glossy
- Spray a square pan or mold before pouring the candy, and let stand til firm (about half H) before unmolding/slicing
- Enjoy! :D

Nih resepnya kalau mau ikutan coba juga, enak loh, su-er deh :D Pakai termometer khusus buat permen yak!

- 1 1/4 gelas gula palem (gula merah sepertinya enak juga)
- 1/3 gelas susu evaporated (kalau ga ada, menurut buku resep juga boleh susu cair biasa)
- 1 sdm sirup jagung yang putih
- 1 sdm margarine
- 1 sdt esens vanila
- 1/2 gelas kacang walnut cacah (atau kacang sesuai selera, bahkan mungkin pakai kenari pun enak!)
- Didihkan susu, gula, sirup jagung hingga termemoter menunjukkan suhu 238 F
- Angkat dari kompor, beri margarine dan vanila, diamkan tanpa diaduk, 10 menit
- Masukkan kacang walnut dan aduk cepat hingga berubah warna
- Tinggal di cetak deh, tuang loyang atau cetakan. Diamkan hingga mengeras, siap di potong dan disajikan :D

Can you substitute something for the corn syrup? I know it is not much but I try and stay away from it.

not too sure

i know molasses and honey often interchange with (dark) corn syrup, but for candy, light corn syrup helps for pliable texture, I believe
