Cooking is one of my biggest passions and and heres a little something that is a fave in our house hold. I created this one for my online health and fitness program www.bodybyfinch.com
It is supper easy and fast to make about 25 min is all it should take. This recipe serves 2 people so if you are having a party just double up for 4 or triple up for 6.

2 tsp Extra Virgin Olive Oil
1 Brown Onion finely chopped 2 tsp Smocked paprika
400 g Tin crushed tomatoes 250 g Seafood marinara mix
250 g Seafood marinara mix
1/2 Red Capsicum deseeded & finely chopped 1 clove Garlic finely chopped
1/4 cup/s Arborio rice
1 cup/s Chicken Stock
1/4 cup/s Peas fresh or frozen 2 sprigs Parsley chopped
2 sprig Parsley chopped
Salt & Pepper to taste
Heat oil in a frypan or paella pan over medium heat.
Saute capsicum and onion for 5 minutes.
Add garlic, paprika and rice and cook for a minute.
Add tomatoes and stock and continue to simmer for about 15 minutes or until all the liquid has been absorbed and rice is tender.
Press seafood into rice, add peas, cover and cook for a few minutes more, until cooked and heated through. Adjust seasonings.
Squeeze over lemon and scatter with parsley to serve.
