Homemade milk jam (dulce de leche) Argentinian recipe (gifs+photos)
There is a Argentine typical sweet that i love so much, it is also eaten In Latin American countries, known as "dulce de leche" in spanish, milk jam in english or dolce de leite in Italy, it has an appearance and flavour similar to caramel. (DO NOT CONFUSE WITH PEANUT BUTTER hehe)
It is mainly done with milk and sugar, this recipe doesnt require a lot of ingredientes but there's something you will need for sure: Patience

Ingredients
Cow milk 1L (full cream milk)
2 teaspoon of vanilla extract
1 teaspoon of bicarbonate
2 cups and 1/4 of sugar
Recommendation: Its better use full cream milk but if you dont have it, you can use any brand of milk and then add cream milk
You can also use vanilla bean, and when it changes the color while cooking remember to extract the vainilla branch.
Preparation
We will pour all the milk in a large deep pot to high heat
Then add all the sugar
When the milk is about to boil, take away the pot from the heat, wait a few seconds and add the bicarbonate and the vanilla extract ( the bicarbonate will turn the milk jam into brown)
The next step is put again the pot in the heat but now in medium, at this point you must stir the mix every 10 minutes.
Around an hour the mix is going to turn to a light brown color and a thick consistency
When it start to change the color you should stir every 5 minutes or anytime you see its necessary
This is to avoid little lumps
When the mix turn into a dark brown color you can proceed to put the pot in a double boiler(bain marie)
Once the mix is in the bain marie we should dont stop stirring, otherwise it will stick in the pot, after 15-20 minutes doing this, we can try the milk jam test. This consists of putting a bit of sweet on a plate and passing the spoon in the middle, if the sweet does not close, it means that it is ready.
The preparation took me about 1 hour 30 minutes, but it can be 2 hours.
Since our dulce de leche (milk jam) is ready, we will pour it into the container of your preference and refrigerate it.
Tips: You can put some marbles(glass sphere) in the bottom of the pot to avoid it get stuck, or you can do to the old school style, stir without stop.
And its ready! you have a good partner to fill cupcakes, cakes, pies and even with bread like jam or peanut butter.
