Archaeologists first unearthed broken jars inside the tomb of Ptahmes, who was mayor of Memphis in Egypt during the 13th century BC, in 1985. At the time, researchers were unaware of the presence of cheese, and the tomb was later lost under drifting sands. The ancient burial was found a second time in 2010, a study published in the journal Analytical chemistry reports.

This year July, details into a study of a specific set of findings were published in science journal Analytical Chemistry. In one of the jars a “solidified whitish mass” was found together with a canvas fabric that may well have been once used to cover the jar’s contents. Dr. Enrico Greco, from the University of Catania, with the colleagues from Cairo University in Egypt, analyzed the substance in order to determine its identity.

The ‘Liquid chromatography’ method was used, peptides were detected. They indicated a dairy product made from cow milk with either goat or sheep milk. Dr. Greco said: “The material analyzed in this study is probably the most ancient archaeological solid residue of cheese ever found to date. “The constituting material was a dairy product obtained by mixing sheep or goat and cow milk”
