Two ways
Go to the exchange and look at the wallet. Most exchanges will show it the wallet can accept a deposit or transfer.
Just look at the exchange wallet here on STEEM. For instance Poloniex wallet is @poloniex. There are a bunch of people using that exchange. If there are no transfers out of the exchange, it is because people can't transfer their STEEM off the exchange.
