Man I love Halloumi Cheese. I find using fish a bit odd esspecially being mixed with tomatoes and the sauces you are using, I would use chicken rather. I love making sandwiches like this and often put crisps on them just like you do. Taste amazing. Also try a chip roll. Fry potato chips put them in a row and top with cheese vinegar and tomato sauce.

Haha it is a nice sandwich i would eat it. I just prefer mayo on my white meats.
