There is more to the Scaleless Dragon apart from he's difficult he is one of the more interesting characters in the game if you look into it.

I feel people go over board with with how difficult the dark souls game actually is sometimes including bosses.
so you say it game of dark souls it easier then what it people say is
I think if people actually took time to level-up and pick their gear wisely for each boss and areas than yes it would make the experience easier for them.
so dark soul more about gear then it skills
I wouldn't say souls is mostly just skill I think you basically need abit of everything gear, skills and levels.
