Hahahaha.... Well, I lived in southern Spain for several years and, really, have yet to find a paella I like. To be fair, though, I'm not a great lover of food with shells, and eating paella has been more or less like devouring a mine field of cruchy, toothe-grinding pieces.
That said, the central part of Spain makes paella with pork and vegetables, which looks amazing. I never got to try it, thoguh!
The BEST of Spanish food? Jamón, queso, pescado frito, salmorejo, flamenquín and, of course, tortilla de patatas. Home-made tortilla, anyway. The hard, dry, salt-packed things at most cafes is crap. Oh, and a good, home-made ensaladilla rusa :-)
i dont want to criticise the dish but its an aberration that has become like a spaniard flag
