To make it simpler for yourself, you can think of it as the 7-day moving average. This way there is always some delay in there and the price doesn't change so much. It has been implemented to prevent users from gaming the system for profit. The reason for using the median over an average is that it makes it nearly impossible for one of the price data sources to manipulate the price. It would take 11 out of 21 sources to collude for 3.5 days to change the price even a little bit.
