Es Cendol Bandung

Recipe

Ingredients:

  • 100 gr hunkwee flour
  • 5 tablespoons rice flour
  • 2 tbsp of sago flour
  • 150 ml thick coconut milk
  • 1 tsp pandan paste
  • 1/2 teaspoon vanilla powder
  • 1/4 teaspoon salt
  • 1 ltr water
  • ice cubes as needed enough water to soak cendol

"Material Santan*

  • 250 ml thick coconut milk
  • 1/2 teaspoon salt
  • 2 lbr leaves pandanus
  • Sugar Syrup Material
  • 250 gr Javanese sugar, fine comb
  • 100 gr sugar
  • 500 ml of water
  • 5 pcs jackfruit flesh

How to Make

  1. We can make the sugar syrup first. Combine all ingredients to make sugar syrup, then simmer while stirring for dissolved sugar. Cook until the jackfruit flesh wither so the aroma comes out. Remove and then cool, set aside.

  2. Next make coconut milk to complement the dish. Boil all ingredients for the coconut milk while stirring so that the coconut milk is not broken. Do not take too long, just boil briefly so the coconut milk does not quickly stale and clot. Set aside.

  3. Time to make cendol. Combine all cendol in a pan / skillet (except boiled water to soak cendol and ice cubes), stir evenly until there is no lump.

  4. Turn on the stove and cook the cendol on a low heat while continuing to stir until clumped. Taste the taste, if still feels the texture of flour, cendol means immature. Stir constantly until perfectly done.

  5. Prepare a basin containing boiled water and ice cubes.

  6. Remove the cendol from the stove. Pour the cendol into a cendol mold placed over a basin of ice water.

  7. Press the mold to let the cendol dough seep under the mold and fall into a basin containing ice water. If you do not have a cendol mold, we can use a bamboo sieve. But cendol dough should be a little squeezed in order to pass into the holes of bamboo siever.

  8. Let the cendol that has been printed in ice water until cendol really clot and solidify.

  9. To serve it, take enough cendol and pour it into a serving glass. Enter the ice cubes, then flush with coconut milk and sugar syrup.
