Steemit Iron Chef 2018 Act 02 #11 : Jackfruit Tarts
Hi! This is my second entry :) I'm not a chef or anything but I do like to bake from time to time. I was inspired having seen the past entries and decided to join, myself, with what I can do and see how I would fare. Also, to improve the skills I have, and maybe showcase a bit of my culture.
When tarts are mentioned, what usually comes to mind is this sweet local delicacy filled with chewy, buttery caramel topped with nuts. They are shaped into small "boats" using special tins (I don't have those) and are wrapped like a candy in colorful, transparent packaging. They are usually found in most specialty food stores, acting as "pasalubong" (food or non-food specialty items that are produced specific to that district, region or country to be given as gifts to people who are not a native of that area).
This version of tart I made doesn't have nuts in it. These tarts are filled with the same sweet, chewy, buttery caramel filling but with sweetened jackfruit. The process is divided into three parts: making sweetened jackfruit, dough, and filling.
These ingredients are only half of the recipe as I only have a dozen mini tins and a few larger ones with me.
Sweetened Jackfruit
100 grams jackfruit
35 grams sugar
lemon juice
Tart Shells
50 grams butter
30 grams icing sugar
A pinch of salt
1 small egg
½ tsp vanilla
100 grams flour
Filling
1 egg
¾ cup sugar
¼ tbsp butter (melted)
½ tsp vanilla
A pinch of salt
My favorite jackfruit, this method is very good, must be very delicious.

Actually I never tried the ripe, sweet jackfruit. I learned about this fruit when it became popular as a meat sub around here. I wonder how the sweet version and your tartlets taste.
Wow, a meat sub when unripe? You should try it, it's one of my favorite fruits, even on its own. It's a sweet, chewy caramel tart. The jackfruit is pretty tasty and has a distinct taste. Here, we put some strips of it on a sugar rolled banana wrapped in spring roll wrappers. It gives flavor and it's great as a sweet snack.
