Steemit Iron Chef 2018 Act 01 Round 11 : Yeast pancakes

I was going to make potato pancakes but ended up with the yeast goodness that I love equally much. The thing is, as a kid I ate a lot of pancakes. My family was big on them. For older generations, they seem to be the food of the poor but for us, it was a great way to save some money and eat like kings and queens. To this day I have made and know about ten different pancake recipes.


I can make these pancakes easily:

  • Potato
  • Yeast
  • Banana
  • Pumpkin
  • Normal (thin)
  • Normal (puffy)
  • Egg American pancakes
  • Zucchini

So, now you know. I am a pancake person and I love em'! It does not matter which ones were prepared when I was little, I was always happy about them. My grandma used to make a lot of potato pancakes, at school we ate yeast pancakes. At home, it was the plain old egg, milk and flour mix. It was always great and I forever ate pancakes without anything added. Even though there are many things you can garnish and top-up your pancakes with, the best thing in the world for me is the unique pancake taste on its own.

So, this week I come to you without veggies or fruits in my dish. This week I present something I love, a lot. Something that reminds me of my grandparents and the happiest childhood memories possible. It is it all together. The smell, the taste, the appetizing look...

I had to switch up my plans a little. Some of you might know. My family is visiting. I had not seen my mom and my brother for exactly a year and so I am giving them my undivided attention. Everything else is mostly on hold (Yes, that is why I am not posting on Steemit often these days). I will be back at the beginning of April. I am taking my first holidays since joining the platform.

Yesterday we were in Legoland all day long. Today in the morning I had breakfast with my side of the family and Jonas father and sister. I had to make something great for breakfast. In the evening we are eating bread with both sides of the family (It is a Bavarian tradition called ''brotzeit'') and I had no chance to make potato pancakes (they are not a morning food). So, I made the next best thing, yeast pancakes.

These pancakes do take longer to make. The yeast needs activating. So, you will probably need an hour and a half and the amount will feed around 5 people. And, yes, they are easy to make! So, let's dive in :)

Ingreients

20 g fresh yeast
340 g flour
300 ml milk
4 tablespoons sugar
20 g butter
a dash of salt
coconut oil for cooking

Heat up the milk but do not make it too hot otherwise the yeast will not make it grow

Mix 50 ml of the hot milk with a spoonful of sugar and the yeast. Set aside for 15 minutes or until the mixture has increased in size twice

Pour the rest of the milk into a bigger bowl and add the butter, salt, and sugar in it

Sift in half of the flour in it and mix everything till the batter is even. It will be a little thin

Take the yeast and milk mixture and pour it in the bowl alongside the rest of the flour, mix it all

Cover the bowl with a towel and leave in a warmer place for around half an hour

When the time has passed, take a pan, pour on the coconut oil and heat it

Pour a glass of cold water and put it next to the pan

Take a tablespoon, put it in the water, take it out and take a piece of batter in it, then drop it on the pan

Repeat the action. Put the spoon in the cold water for a second, take it out, grab a piece of batter and put it on the pan

This should be a thick batter. It also should not stick to a wet spoon. The pancakes should be made small and turned once brown. Make them on medium heat. Serve with jam, fresh fruits, sour cream or plain!

Pancakes! Oh yes...one of my favorite childhood food and I still love them! You are really a pancake master my friend...so many different varieties/flavors!

Here in my country, the most common one is the old milk, egg, flour and sugar one! But still I love them!

Oh, yes! We have that same exact recipe! It is also the most common in Latvia and I love pancakes made out this batter! However, these yeast pancakes are my absolute favorite. Yeast does wonders to pancakes :D

I shall try and make this on the weekend! Have you heard of something called "Dosa"? It is a type of pancake in India.
