Steemit Iron Chef 2018 Act 01 Round 12 : Celery root taken to the next level
Scaredy pants was on for this weeks challenge ... as I actually only use Celery in my Waldorph salad ... that I did a few weeks ago ... got my brain in a spin and this was what I came up with ,,,
Celery root Pasta with a light creamy Dijon sauce
Quite simple and putting it to the test as I never worked with Celery root before ...
Ingredients
simple and simple
celery root
double cream
parmasan cheese
dijon mustard
salt and pepper
and lemon
Steps
cut out a middle section dice of the root .... about 1,2 cm thick... squeeze a lemon over it you dont want it to brown ...
use a potato peeler to get your pasta strips ... as long as possible... let it drop into iced water with lemon juice ... we want it to keep it's color
prepare the sauce
double cream and a good spoon of Dijon mustard
let it thicken and cook in ... taste and season to taste with salt pepper etc.
boil your celeryroot pasta in salted water with fresh lemon juice added... 2-3 minutes to al dente ... still gotta have a bit of a bite ...
Plate up
a bit of your beautiful soft yellow sauce on the dish ...
build up your pasta ...of the celery root
add more sauce,,, decorate with celery leaves...
make sure to get a proof pic in ....
add freshly grated parmasan ... salt and pepper...
a closeup ... and on to the tasty section ...
I surprised myself here ... the taste was beautiful... the textures perfect and I am happy ...this was both easy and quick to make I do recommend that you try it on it is simple = easy to adjust to various tastebuds ... so get playing add and subtract as you may like ... but give celery root a chance it is well worth it ...
