Today is a day a bit moved for me, many things to do go here go there, only that there is something that I should always do a good meal and if it is healthy better, so I made a stop in my agenda today and went straight to the refrigerator and I saw that I had and what is always missing in my refrigerator are vegetables and all started to see what to do and came out this recipe that resulted in a nice combination of vegetables and a star called celery.

For me the celery is a vegetable that never fails in my food since I use it as salt for its good sodium properties. Here is this. Nutritional properties of celery. Celery contains fiber, vegetable protein, antioxidants such as flavonoids, vitamins A, B1, B2, B3, B6, C, minerals such as potassium, sodium, iron, magnesium, phosphorus, selenium and calcium and essential oils.

3 branches of celery
5 baby beets of colors
2 cloves of garlic
2 tablespoons of coconut flour
2 tablespoons of dehydrated coconut
1/4 teaspoon curry powder
1/4 tablespoon of tumaric
1 tablespoon chopped fresh ginger
1/4 teaspoon cayenne pepper optional
sliced almonds

In the oven, I roasted the beets wrapped in aluminum and meanwhile chopped the celery and garlic and ginger and in
the blender in a little coconut water coconut and coconut flour and I was adding little by little the spices until a paste and add a little water until it is a little lighter.
In a pan I put the vegetables with a little olive oil for a few minutes and add the sauce I made already ground.
I stirred it very well and let it cook a little more. I reserved it to be a little warm to put it in the processor to paste and add a little water of coconut or water if you prefer and do not have coconut water. I returned it to the frying pan a little more so that the flavors were integrated more The beets took them out of the oven and peel them and made them into round halves. For the dish to look for the presentation I did as you see the photo. But as to eat as a salad you can chop the beets and lettuce into cubes and add the sauce as a dressing and this dressing can be used in any type of vegetable.
