I'm wondering also about the banana chai pudding? I'm imagining that the chia seeds would swell to have similar texture of tapioca in tapioca pudding.
Exactly like tapioca! But the tiniest tapioca balls you could imagine. If you like tapioca you'll love chia pudding - and just a little bit of chia seeds goes such a long way!
