Study: Carbohydrates are more dangerous than fat

Carbohydrates, not fat, pose the greatest risk to health and increase the risk of premature death, a new study suggests.

The study, conducted in 18 countries and involving 135,000 people, is a common belief in the world of nutrition that fat is the biggest health risk, CBS reported Tuesday.

The study pointed out that the proliferation of carbohydrates, especially refined and processed, increases the risk of premature death, while eating vegetables, fruits and pulses reduce the size of this risk.

"Those who eat a high percentage of carbohydrates - at 77 percent of their daily diet - have a 28 percent chance of premature death and the risk is reduced if carbohydrates are reduced," she said.

Those who eat large amounts of fat - up to 35 percent of their daily diet - will be 32 percent less likely to die of premature death and 18 percent less likely to have a stroke, compared to those who eat less fat.

The researchers noted that eating too little fat, ie, within 3 percent per day is associated with an increased risk of premature death, compared to those who eat up to 13 percent.

The study was conducted by researchers at the Center for Health Research at the University of McMaster, Canada.
