Paseando por los montes de la Sierra de Gredos, al cruzar la carretera, me encontré con un rebaño de cabras. El cabrero estaba hablando con otro en el arcén y las cabras, como es natural, habían tirado hacia el monte.

Me acerqué a ellas y aproveché para hacer algunas fotos. Sinceramente, con curiosidad porque nunca antes había tenido ocasión de estar tan cerca de ellas mientras estaban sueltas.

He buscado información y me he quedado asombrado al conocer que la cabra ha convivido con el ser humano desde los tiempos mas remotos. Se tienen constancia de que nuestros ancestros las cuidaban desde por lo menos 10.000 años.

Es decir, en muchas ocasiones, las comunidades de seres humanos han sobreviví y progresado gracias al pastoreo de cabras.

Las cabras son mamíferos muy apreciados, no solo por su carne sino, sobretodo por la leche que producen. También, se puede utilizar su piel. Los aborígenes primitivos han utilizado sus huesos y sus cuernos para preparar utensilios e instrumentos.

En las Islas Canarias, los aborígenes que llegaron a las islas en el siglo X a.C lo hicieron junto con sus cabras y cuando fueron conquistados en el siglo XIV era un pueblo primitivo que vivía del pastoreo.

Al macho de cabra, se le llama cabrón. Este término, también es un insulto en España y se emplea para referirse a aquellos maridos cuyas mujeres les han sido infieles. No sé si en otros países y utiliza la misma palabra. También se le denomina macho cabrío o chivo.

Los sátiros o seres mitológicos hipersexuales se representaban con rasgos muy similares a los del macho cabrío. En esta fotografía que hice en la Galería de los Uffizi en Florencia se ve claramente. En esta bella escultura romana, representaron a un sátiro tentando a un joven que toca la flauta.

Esta de cabeza de sátiro la esculpió Miguel Ángel Buonarotti . Se considera que es una de sus primeras obras, cuando todavía era muy joven y estudiaba en el taller de Ghirlandaio. Hice esta fotografía en el museo de la Ópera del Duomo de Florencia.

Me sorprendió mucho que el pastor de las cabras tenía unos rasgos faciales muy similares a sus animales. Tenía una barba alargada y picuda, con lo que su apariencia era muy similar a la cara de una cabra. Tal vez, por permanecer tanto tiempo juntos creo que, en este caso, se había desarrollado un proceso de identidad en su fisonomía. Un fenómeno similar al que observamos entre los perros y sus dueños.

El término que utilizamos para referirnos a las crías es el de ”cabrito” o “chivito”. En las Islas Canarias se conocen más por el nombre de baifo o baifito.

Estos animalitos me producen muchísima ternura, casi la misma que las ovejitas. El año pasado visité una granja donde tenían baifitos recién nacidos y tomé esta foto tan tierna.

Hay cabras en todos los lugares del mundo, aunque su hábitat natural son las montañas y los fríos y húmedos. Son capaces de comer casi cualquier cosa. Ingieren zarzas, las hojas de los pinos, etc e incluso a veces se suben a las ramas de los árboles para comer sus hojas. Tal vez por estas locuras se emplea la expresión: “Estar loco como una cabra”.

El macho se distingue muy fácilmente porque tiene cuernos y las hembras porque tienen unas ubres muy voluminosas ya que producen mucha leche.

Las cabras tienen una cola corta y respingona, un mechón de pelos largos en la barbilla como si fuera una barba y unas bolitas en el cuello colgando que son dos glándulas que se llaman mamellas. La función de estos pliegues no está aclarada, algunos dicen que es un simple adorno y otros creen que tienen una función inmunológica.

En el Valle del Tiétar hay mucho ganado. Hay vacas, caballos, ovejas y también cabras con las que se elaboran unos quesos muy ricos y prestigiosos. Este medio de vida, los habitantes del pueblo lo representan claramente en los belenes que hacen en Navidad.

La ganadería quedó plasmada también en este capitel medieval que fotografié en Florencia también. Me gusta mucho esta original composición del siglo XIII.

Las cabras viven unos diez o doce años, aunque pueden llegar a los dieciséis o dieciocho si reciben buenos cuidados. Es decir, parecida a la vida de los perros.

En España, la época ideal para engendrar es el otoño, es decir, los meses de septiembre, octubre y noviembre. Son los meses ideales para la procreación.

Los machos pueden fecundar cuando cuentan con dos años, e incluso antes, y lo pueden seguir haciendo hasta los seis años de edad. Podrían ser sementales durante mas tiempo pero no es recomendable porque podrían generar crías con malformaciones.

Las cabras producen más leche que las ovejas. Se las ordeña dos veces al día y dan leche durante seis o siete meses. La leche de cabra es muy digestiva y nutritiva. Además, se puede mezclar con la de vaca para hacer quesos.

Hace unos años, conocí a un aldeano canario que tenía algunas cabras y que le gustaba cenar y desayunar su leche con algo gofio. Era lo único que comía a esas horas. Él decía que esta alimentación le conservaba joven y sano. Ciertamente, para su edad tenía una vitalidad y fuerza envidiable. No me queda duda de que tenía razón.

La carne de la cabra y del cabrito se pueden comer. Es una carne recia. Por eso hay que saber cocinarla bien pues está algo dura y fibrosa. Por eso, la carne de cabrito gusta mas porque es mucho más tierna. Aunque la más apreciada es la de lechal porque todavía no ha consumido hierba y no tiene un sabor tan fuerte.

Espero que os haya gustado esta publicación. La ocasión me ha permitido introducir algunas fotografías que tenía de otros viajes. Las he juntado con las que tomé del rebaño de la carretera. Espero que esta mezcla haya sido de vuestro agrado y no penséis que “estoy como una cabra” o, como dicen en Canarias, que “se me ha ido el baifo”.

The goat go to the mountain.

Walking through the mountains of the Sierra de Gredos, crossing the road, I found a herd of goats. The goatherd was talking to another man, on the shoulder, and the goats, naturally, had pulled towards the mountain

I approached them and took the opportunity to take some photos. Sincerely, with curiosity because I had never before had the opportunity to be so close to them.

I have searched for information and I have been amazed to learn that the goat has lived with the human being since the earliest times. There is evidence that our ancestors took care of them for at least 10,000 years.

That is, on many occasions, communities of human beings have survived and progressed by grazing goats.

Goats are highly prized mammals, not only for their meat but, especially for the milk they produce. Also, you can use your skin. Primitive aborigines have used their bones and horns to prepare utensils and instruments.

In the Canary Islands, the aborigines who arrived on the islands in the tenth century BC did so together with their goats and when they were conquered in the fourteenth century it was a primitive people who lived on grazing.

The goat male is called a bastard. This term is also an insult in Spain and is used to refer to those husbands whose wives have been unfaithful to them. I don't know if in other countries and use the same word. It is also called male goat or goat.

The satyrs or hypersexual mythological beings were depicted with traits very similar to those of the goat. In this photograph I took in the Uffizi Gallery in Florence, it is clear. In this beautiful Roman sculpture, they represented a satyr tempting a young man who plays the flute.

The goats have a short and snub tail, a tuft of long hairs on the chin as if it were a beard and some balls on the neck that are two glands called mamellas. The function of these folds is not clear, some say it is a simple ornament and others believe they have an immune function.

In the Tiétar Valley there is a lot of cattle. There are cows, horses, sheep and also goats with which some very rich and prestigious cheeses are made. This way of life, the inhabitants of the town clearly represent it in the nativity scenes they do at Christmas.

Livestock was also reflected in this medieval capital that I photographed in Florence as well. I really like this original 13th century composition.

Goats live for about ten or twelve years, although they can reach sixteen or eighteen if they receive good care. That is, similar to the life of dogs.

In Spain, the ideal time to breed is autumn, that is, the months of September, October and November. They are the ideal months for procreation.

Therefore, goat meat likes more because it is much more tender. Although the most appreciated is the one of suckling because it has not yet consumed grass and does not have such a strong flavor.
