Soup could be defined as a liquid food served at the beginning of a meal or served in-between courses or as a meal by itself.It could be served to create appetite. They could be served hot or cold.
Classification of soup
1.Clear soup
*Hot
*Cold
2.Unclear soup
*Hot - Passed (after strain)
*Cold - Un Passed (without strain)
Clear soup - Consomme
A clear soup prepared from beef,chicken or game stock. Consomme could be served on its own (Consomme nature) or with garnish (the according to the garnish the name of the Consomme could be changed). Consomme could be crystal clear,amber in color.
Hot Consomme -
Consomme Royale , Consomme Juliene , Consomme Brunoise, Consomme Celestine
Cold Consomme -
Consomme en tasse , Consomme Madrilene
Unclear
Cold Soup -
Vichyssoise , Gazpacho , Ice Avocado soup , Cold Tomato soup
