Summer goodness in a glass: mango, strawberry, bok choy, and coconut milk green smoothie
A good morning makes a good day! This tropical summer smoothie is definitely one of our favorite ways to start the day.
Bok choy, aka Chinese cabbage or pak soi, can be found in most grocery stores these days. This mild tasting green is an excellent source of health-promoting antioxidants and phytonutrients.
It is a wonderful recipe for green smoothie beginners. You won't taste the greens at all.
Ingredients (serves 2)
- 2 cups bok choy
- 1 cup strawberries
- 2 cups mango
- 1 cup coconut milk
- 1 cup water
- Optional: raw cacao powder or nibs to taste (I added 1 tbsp raw cacao powder)
Directions
- Blend bok choy, coconut milk, and water until smooth.
- Add the remaining ingredients and blend again
Recipe notes
Use one or more frozen fruits to chill the smoothie.
If the smoothie is too thick for you, add more liquid base.

Hmmm never tried bok choy in a smoothie before. I really like Kale in my smoothies. I'm going to follow you for more great recipes. @kbargold
We love kale too. If you don't mind a green taste, watercress is very yummy too!
