Pineapple Mojito Green Smoothie
A tropical, satisfying, and delicious smoothie that tastes similar to a mojito and disguises a whole plate of healthy greens!
We had this drink for breakfast, so we didn't add rum to it, but nothing stops you from adding a splash (or two) to make a semi-healthier version of the classic mojito.
Ingredients
- 2 cups kale
- 2 cups unsweetened coconut water
- 3 cups pineapple
- 1/4-1/2 cup fresh mint leaves, or to taste
- 1 lime or lemon peeled and seed removed (use less if using lemon)
- 1 tbsp chia seeds (optional topping)
- 2 tbsps dried goji berries (optional topping)
Instructions
- Blend kale and coconut water until smooth. Add remaining ingredients and blend again.
- Top with chia seeds, goji berries, flax seed, hemp hearts, etc., if you like.
Recipe Notes
- Use one or more frozen fruits to chill the smoothie.
- If the smoothie is too thick for you, add more liquid base.
- If you have a high-speed blender you can throw in everything at once.

Interesting to see goji berry in here. We have English name for it - wolfberry. I think it's the same. Supposed to be good for the eyes. now, Following.
I love goji berries. Never had them fresh, though. Wonder how they taste.
Neither have I. The ones we get in Singapore are the dried ones.
