Chicken Caesar Salad:


The salad is very consumed all over the world, from the simplest, such as mixed with tomato, onion and lettuce, to elaborations a little more worked like the one I bring in this entry, the Caesar salad with chicken.

Ingredients
For its preparation these ingredients are needed:

A medium ciabatta bread.
3 tablespoons olive oil.
3 boneless and clean chicken breasts.
A large romaine lettuce (also worth iceberg)
For the dressing:

2 cloves of garlic
4 anchovies
Parmesan cheese in cubes.
Grana Padano grated cheese.
5 Tablespoons mayonnaise.
1 Tablespoon of white wine vinegar.
Preparation mode
We will start by heating the oven to 200 degrees and while it acquires temperature we will cut several slices of bread from the ciabatta to make crusts, that is, irregular pieces that we can make at small pinches.

On the baking tray we will put paraffined paper and the pieces of pal on which we will pour some olive oil and salt and we will bake them between 8 and 10 minutes.

On the chicken breasts we will rub the oil and season. We put a pot with a little oil over medium heat, put the chicken breasts and let them do for 4 minutes, moving them so they do not stick.

We'll turn it around and we'll do another four minutes. We will take it out and reserve it.

We will peel the cloves of garlic and put them in the glass of the blender or in the mortar. If we do it with the mortar, we will also throw the anchovies and crush them.

The mixture will be put in a small bowl and we will throw the rest of the ingredients of the dressing except for the tacos of parmesan. It should be a sauce with a consistency like that of a yogurt.

If it is too thick we can add a little milk and keep stirring. We will wash the lettuce and chop it into large pieces, leaving it in a bowl or large bowl.

The chicken will be cut into strips, but not too long, just enough for a bite, we will throw them in the bowl next to the crusty bread crusts and mix it with your hands.

Finally we just have to throw the sauce on top and sprinkle more grated cheese and it will be ready to eat!

Tips
If the breast is thick, we can make some cuts or puncture it well with the fork, so that it does not remain raw inside when we make it.

If there are too many pieces of chicken, they can be added to any lentil recipe that we make another day.
